Kapenta, the Tanganyika sardine (also known as matemba) is a traditional dried (but now also available frozen) fish employed in Zambian, Malian and Zimbabwean cuisine. Kapenta is two species (Lake Tanganyika sardine, Limnothrissa miodon and Lake Tanganyika sprat, Stolothrissa tanganicae), both of which are small, planktivorous, pelagic, freshwater clupeid originating from Lake Tanganyika in Zambia. Over-fishing has been a major problem in Lake Tanganyika. However,Limnothrissa miodon has been successfully introduced in both natural and artificial African lakes. Large kapenta fisheries now take place in the Lake Kariba (Zambia/Zimbabwe) and Cahora Bassa (Mozambique).
Ingredients:
250g (1/2 lb) dried kapenta
1 medium onion, chopped
1 large tomato, chopped
1 tsp curry powder
Oil for frying
1 packet soup powder (optional) [tomato is traditional]
Method:
Soak your kapenta in boiling water for about 15 minutes, making sure that all the fish are completely immersed in the water. After 15 minutes, drain and pat the kapenta dry.
Heat oil in pan and add the kapenta then fry until well browned (about 6 minutes) then add the onion and curry powder. Stir and fry the onion and kapenta for about a minute. Add the tomatoes, stir, reduce the heat, cover the pot and cook for about 5 minutes to allow the tomatoes to break down and form a sauce.
At this point add a little of water. You may also add soup powder, if using. Cover the pot again and let it simmer for another 3 minutes and your kapenta stew is ready to serve.
