Jugo de Avena (Oat and Coconut Smoothie) is a traditional Dominican (from the Dominican Republic) recipe for a classic drink of soaked oats, bananas and carrot in a lightly-spiced coconut milk base. Ingredients:

30g rolled oats
160ml water
125ml coconut milk, frozen in ice cubes
2 bananas, peeled, chopped in pieces and frozen
1 carrot, scraped and chopped
1 tbsp maple syrup
1 tbsp almond butter
1/2 tsp vanilla extract
1/2 tsp citrus zest
1/2 tsp ginger, grated
1/2 tsp ground cinnamon
1/4 tsp nutmeg

Method:

In a bowl, mix the rolled oats with the 160ml water and set aside in your refrigerator to soak over-night.

Fill half an ice-cube tray with coconut milk and freeze overnight, along with chopped banana.

In the morning, blend the soaked oats and residual water together to form a smooth liquid.

Add in all the other ingredients and blend until smooth.

Serve poured into glasses.
