Espaguetis Dominicanos (Dominican Republic Spaghetti)

Espaguetis Dominicanos (Dominican Republic Spaghetti) is a traditional Dominican (from the Dominican Republic) recipe for a classic spaghetti-based dish of a salami, vegetables and olive sauce in a tomato base finished with milk and the spaghetti. This is a classic spaghetti dish from the Dominican Republic. Traditionally it's made with salchichon (Dominican salami) but you could also use Shredded or diced chicken, diced Ham or fried Pork sausage.

Ingredients:

200g dried spaghetti
500g salchichon (Dominican salami), cut into 2cm cubes
2 tbsp olive oil
1 large onion, diced
1 green bell pepper, diced
2 garlic cloves, minced
60g pitted green olives
4 tbsp sazon
2 tsp salt, or to taste
¼ tsp freshly-ground pepper, or to taste
¼ tsp oregano, or to taste
250ml tomato purée
350ml tomato sauce
125ml evaporated milk (optional)

For Topping:
Parmesan cheese, grated
Chopped coriander leaves

Method:

Bring a pan of lightly-salted water to a boil. As soon as it boils add the pasta and cook according to the package instructions. Once the pasta is al dente drain the water then mix the spaghetti with a little oil to prevent it from sticking and set aside

In a separate pan, heat the olive oil over medium heat. Add the salami and cook, stirring until it browns.

One at a time, add the onions, bell pepper, olives, and garlic. Cook, stirring, for about 2 minutes.

Add the tomato sauce, tomato purée, sazon, 1 tsp of salt, and oregano, cover and simmer on medium heat for about 3-5 minutes. Reduce the heat to low.

Now add in the milk and the spaghetti. Make sure to stir well until the milk is completely mixed through. Do not let the milk boil. Adjust the seasonings to taste.

Turn the mixture into a warmed serving bowl. Sprinkle over some grated parmesan, bring to the table and serve.
