Braf (Broth)

Braf (Broth) is a traditional Dominican (from the Island of Dominica) recipe for a classic stew of pork, small fish, and dasheen with green bananas, christophene pumpkin and cabbage in a herbed broth. Despite the name, this is actually a stew of pork, small fish, dasheen leaves and tubers, green bananas, christophene pumpkin and cabbage in a herbed broth.

Ingredients:

500g Pickled or Smoked Pork
500g Sprats or Small Jacks
225g Dasheen (tannia or taro leaves)
225 Tannia tubers, peeled
225g Green Bananas
2 Medium Christophene pumpkins
500g Cabbage
250ml of Oil
Seasoning Ingredients:
juice of 2 Limes
2 sprigs of Chives
1 sprig of Thyme
2 garlic cloves, crushed
1 Onion, chopped
1 Hot chilli Pepper
3 Cloves

Method:

Cut the meat into bite-sized pieces than place in a large bowl or pan, cover with water and set aside to soak over night (this helps remove the excess salt).

The following day, drain the meat, discarding the water. Clean the fish and place in a large bowl then add 1 clove of crushed garlic and the juice of 1 lime before pouring over sufficient water to cover the fish. Set aside to marinate as you continue the preparation.

Now peel and wash the provisions and cut into serving-sized portions. Peel and slice christophenes. Cut cabbage into four sections.

Place the meat in another large pan, pour over plenty of water then bring to a boil and cook for about 30 minutes until the meat is tender. Drain the meat and return to the pan. Add the seasoned fish (and their seasoning water) along with all the remaining seasonings.

Bring to a boil, reduce to a simmer and cook for 10 minutes. Add the oil and serve hot.
