Dombolo (South African Dumplings)

I used to love dumplings added to stews when I was a child. But over the years, I had forgotten the practice. Recently, though, I came across dombolo (South African dumplings) and as I cook local curries, potjekos and stews more now that I did, every now and then add dumplings and use these as the accompaniment rather than potatoes, green bananas, pap, couscous or rice.
These are quick and easy to make, but have a delightful fluffy texture. They also make stews and potjekos go much further than they used to. The secret here is the addition of bran for more texture.
If making these for lamb-based dishes I tend to add 1 tsp fresh, chopped thyme and rosemary. But the traditional version is unflavoured)
Ingredients:
275g (2 ¼ cups) flour
50g (6 tbsp) bran
3 ½ tsp baking powder
½ tsp fine sea salt
2 tsp butter
190ml (3/4 cup) whole milk
Method:
Sift together the dry ingredients into a bowl. Add the butter and rub into the dry ingredients with your fingertips until well combined. Add the milk and mix in with a fork then, using your hands knead to form a dough.
Divide the dough into between 8 and 10 equal portions then shape these into balls. When your stew or curry is about 15 minutes from being ready gently sit the dough on top. Cover you pot and cook over low heat for about 15 minutes, until the dumplings have cooked through and the tops are golden.
If you are cooking your stew or curry in an oven or on the braai (barbecue) this also works just as well there. Just pop in the dumplings 15 minutes before the end of the cooking time. Pop the lid back on, return to the heat and continue cooking for 15 minutes.
