Ingredients:
120g rice, washed and drained
1 large tomato, grated
1 tbsp butter
salt and black pepper, to taste
Method:
Add the grated tomato to a measuring jar and make up to 500ml with water. Pour into a medium-sized, heavy-bottomed saucepan and add the butter before seasoning well.
Place the pan on low heat and half cover with a lid and cook for about 20 minutes. Around this times you should see holes appearing in the surface of the rice. Remove the lid and stir-occasionally. Continue cooking until the rice is tender and all the liquid has evaporated.
Traditionally this type of pilaf is served with beans-based dishes. It also makes and excellent accompaniment to West African style stews.
