Dégué (Couscous and Yoghurt Dessert; also known as Thiakry): A Malian recipe for a dessert of sweetened couscous in a yoghurt and milk base flavoured with vanilla sugar that's served chilled.

Ingredients:

100g couscous
50g sugar
400ml yoghurt
500g milk powder
1l very hot water
vanilla sugar, to taste
pinch of ground ginger
20g butter

Method:

Use a little cold water to dissolve the milk powder then mix in the hot water and then the yoghurt. Allow to cool, cover and set aside to stand over night.

The following day, steam the couscous for about 20 minutes or until cooked then take off the heat and stir in the butter. Set aside to cool then add the sugar. Finally stir in the yoghurt and milk mixture.

Chill in the refrigerator for at least 2 hours. Serve as an accompaniment to ice creams or glaces.
