Dan Waké: A Nigerienne recipe for a classic vegetarian accompaniment of balls made from a blend of wheat flour, bean flour and powdered baobab leaf with potash that are boiled to cook.

Method:

Mix together the wheat flour, bean flour and powdered baobab leaf in a bowl. Dissolve the potash in 100ml water and mix into the flours. Now add sufficient additional water to bring the ingredients together as a dough.

Bring a pan of salted water to a boil. Tear off small pieces of the dough, shape into balls and add to the pan of boiling water. Cook for about 25 minutes, or until cooked through.

When cooked, remove the dan waké balls with a slotted spoon and transfer to a bowl of cold water to chill.

Serve immediately, accompanied by onion fried in groundnut oil, fresh chillies and hot chilli powder.
