Ingredients:

1 roast chicken
250ml chicken stock
1 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp salt
450g cooked rice

Method:

Roast the chicken as you would normally. When the chicken is done remove the bird from the roasting pan and set aside until you can handle it. In the meantime stir the spices into the pan juices then stir-in the rice.

Cut the chicken into 8 or 10 serving pieces and bury these in the rice you've just added to the roasting pan. Cover the pan and place in an oven pre-heated to 170°C and roast for 30 minutes. Serve hot.
