Curried Daylilies

Ingredients:

For the Stir-fry:
60ml sesame oil
350g daylily flower buds, sliced
2 medium carrots, sliced
4 celery sticks, sliced
200g tofu, cut into cubes
70g cashew nuts or peanuts

For the Curry Sauce:
75g silken tofu, drained
60ml dark miso (fermented soybean paste)
2 tbsp curry paste
juice of 1 lime
1 tbsp arrowroot

Method:

Heat the sesame oil in a large wok over medium heat. Add the daylilies, carrots, tofu an cashew nuts (or peanuts). Cook, stirring constantly, for 10 minutes.

In the meantime, combine the silken tofu, miso, curry paste, lime juice and arrowroot in a blender. Process until smooth then pour this sauce over the stir-fried ingredients. Bring the mixture to a boil then reduce to a low simmer and continue cooking for 10 minutes, stirring frequently.

Serve hot on a bed of brown rice and accompany with Indian-style flatbreads.
