This is the classic basic method of cooking rice in Guinea-Bissau. This is such an important accompaniment (a staple of the diet) that though the method is very simple, it still deserves its own recipe entry.

Ingredients


500g rice
1l water
salt, to taste

Method:

Bring the water to a boil. Wash the rice thoroughly then add to the boiling water.

Season with a little salt, reduce to a brisk simmer and cook, covered for between 20 and 25 minutes, or until the rice is tender and all the liquid has been absorbed.

The rice should always be served hot, accompanied by Guinean stews.
