Crusty Garlic Potatoes: An Irish recipe for a accompaniment of parboiled potatoes coated in a cornmeal and garlic mix that are cooked over a barbecue.
Ingredients:
500g new potatoes
10 large garlic cloves, peeled (leave the cloves whole)
2 eggs, beaten
8 tbsp yellow cornmeal
parsley sprigs, to garnish
Method:
Scrub the potatoes thoroughly. Add the potatoes and garlic to a saucepan, cover with salted water and bring to a boil. Cook for 12 minutes, or until just tender. Drain, the potatoes, reserving the garlic.
Peel the potatoes as soon as they are cool enough to be handled. Coarsely chop the garlic, and using a small skewer insert pieces of the garlic deep in each potato.
Dip the potatoes first in the beaten egg, and then in the cornmeal. Press the cornmeal in well with a round-bladed knife, then dip in the beaten egg once more.
Arrange the potatoes on a well-oiled barbecue rack over hot coals and cook for between 10 and 15 minutes, or until they are crusty and golden brown.
Serve in a basket lined with a clean napkin. Garnish with fresh parsley sprigs immediately before serving.
