Ingredients:

100g cooked salmon, flaked
1 egg, lightly beaten
2 tbsp freshly-grated Parmesan cheese
2 tbsp onion, finely chopped
5 tbsp flat-leaf parsley, finely chopped
1/8 tsp freshly-ground black pepper
2 tbsp olive oil

Method:

Combine the salmon, egg, Parmesan cheese, onion, parsley and black pepper in a bowl. Mix thoroughly with your hands then divide into four equal portions. Shape these into balls, patties or croquettes and set aside.

Heat the olive oil in a frying pan over medium heat. Add the croquettes and fry for about 5 minutes per side, or until cooked through and golden brown all over.

Serve hot accompanied by vegetables and rice or potatoes.
