Ingredients:
2 onions, chopped
2 garlic cloves, minced
3 tbsp butter
450g black beans, soaked over night in plenty of cold water
1 ham bone, cracked
1 celery stick, chopped
1 bay leaf
120ml sherry, or dry white wine
salt and black pepper, to taste
Method:
Fry the onions and garlic in the butter until soft and translucent (about 5 minutes) then transfer to your slow cooker (crockpot) and combine with the beans, ham bone, celery, bay leaf and 2l water.
Cover and cook on high for 2 hours then reduce to low and continue cooking for a further 9 hours. Remove the ham bone and the bay leaf then purée half the soup and return to the pot.
Add the sherry, salt and black pepper then allow to heat through for 20 minutes.
Serve ladled into warmed soup bowls garnished with chopped parsley and lemon slices.
