Ingredients:

450g boned pork shoulder, meat cut into cues
500g black beans, cooked (or tinned)
1 green bell pepper, chopped
1 large, ripe tomato, blanched, peeled, de-seeded and chopped
1 small red onion, thinly sliced
2 garlic cloves, crushed
1/2 tsp ground cumin
2 tsp hot chilli powder
1/2 tsp salt
200g tomato purée
120ml sour cream
2 tbsp finely-chopped coriander leaves

Method:

Stir together the pork, beans, bell pepper, tomato, onion, garlic, cumin, chilli powder, salt and tomato purée in a crockpot. Cover and cook on low for about 8 hours then stir-in the beans and cook for 1 hour more.

Spoon into bowls and garnish with the sour cream and coriander before serving.
