Crockpot Bayou Gumbo

Ingredients:

3 tbsp plain flour
3 tbsp oil
225g smoked sausage, cut into 1.5cm slices
300g fresh okra, thinly sliced
1 onion, chopped
1 large green bell pepper, chopped
3 garlic cloves, minced
1/4 tsp cayenne pepper (ground)
1/4 tsp black pepper
480g tinned chopped tomatoes (with juice)
360g cooked, shelled, prawns

Method:

Mix together the flour and oil in a small saucepan to form a roux. Cook this, stirring constantly, over medium heat for about 4 minutes.

Reduce the heat and continue cooking, stirring constantly, until the mix turns a reddish brown (about 10 minutes). Scrape the cooked roux into a 2l slow cooker (crockpot) then stir-in all the remaining ingredients (except the prawns, rice and water).

Cover and allow to cook on low for about 8 hours then add the prawns and mix well. Allow to continue cooking on low for a further 20 minutes then serve on a bed of white rice.
