Crispy Tilapia

Ingredients:

10 tilapia fillets (about 1.2kg)
40g plain flour, for dusting the flour
1 egg
120ml buttermilk
60g plain flour
60g polenta (yellow cornmeal)
salt and freshly-ground black pepper, to taste
1/2 tsp baking soda
1/2 tsp baking powder
2 tbsp Old Bay seasoning mix
groundnut oil or olive oil, for shallow frying

Method:

Season the fish fillets liberally with salt and black pepper.

Beat together the egg and buttermilk and add to a bowl.

Arrange the 40g plain flour on a plate and mix together the remaining flour, polenta, baking powder and baking soda on another bowl. Season this flour mix with salt, black pepper and the Old Bay seasoning blend.

Pour oil into a large frying pan so that it just covers the base and set over medium heat.

When the pan is hot, take your first fish fillet and dust with flour to coat. Dip in the egg and buttermilk mix then dip in the seasoned flour and polenta blend, ensuring that it's well coated.

Place in the hot oil and prepare another fillet. Fry for about 2 minutes per side, turning half way.

Remove from the pan and season to taste with salt. Serve immediately (you may need to cook in batches).

The fish is best served with tartar sauce as an accompaniment.
