Crispy Parmesan Cups: A British recipe for a method of making cups from melted Parmesan cheese that can be used for dips or fillings at parties and which are particularly good for a New Year gathering.
Ingredients:
125g freshly-grated Parmesan cheese
pinch of freshly-ground black pepper
Method:
Place a small non-stick pan over medium heat. When hot, drop 1 tsp of the grated cheese in a small, neat, pile in the centre of the pan.
Cook until the cheese just melts, sprinkle over a little black pepper then flip over. Continue cooking until golden brown.
Invert a mini muffin tin on a flat surface and lightly grease the outside of the wells.
Carefully remove the cooked cheese from the pan with the spatula. Carefully drape over one of the inverted muffin tin wells and gently and carefully mould over the well.
Allow to cool and harden then carefully peel away the cheese cup.
Fill with any filling you fancy — these make excellent little nibbles for a New Year party.
