This is an easy and economical dish for a family suppers. The flavours and ingredients are based on those of a Greek barbecue, but the dish is adapted to be cooked in an oven. The vegetables and chicken are cooked at the same time so that you end up with a complete meal.
Ingredients:
5 tbsp olive oil
100g feta cheese, cut into 8 slices
8 chicken thighs (on the bone and with skin on)
2 tbsp fresh oregano leaves, chopped
1 tsp finely-grated lemon zest
2 garlic cloves, crushed
1 tsp smoked paprika
4 potatoes, cut into wedges
90g kalamata olives
200g cherry tomatoes
salt and freshly-ground black pepper, to taste
Method:
Take each chicken thigh and stuff a slice of feta cheese under the skin of each one.
Combine half the olive oil in a jug with the oregano leaves, lemon zest, garlic and smoked paprika. Whisk to combine then pour over the chicken. Toss lightly to combine, cover and set aside to chill for 20 minutes.
In the meantime, heat 1 tbsp of the remaining oil in a large frying pan over high heat. Add the chicken and cook, skin side down, for between 4 and 5 minutes or until the skin is crisp and golden brown.
Transfer to a baking dish. Combine the potatoes, onions and olives in a second baking dish. Drizzle over the remaining olive oil and season to taste.
Place both dishes in an oven pre-heated to 200°C (gas mark 6) and bake for 20 minutes. At this point add the cherry tomatoes to the chicken, return to the oven and cook for 10 minutes more, or until the tomato skins are just blistered.
Serve the chicken accompanied by the baked vegetables.
