Method:

Sprinkle the fish fillets with the lime juice then set aside to marinate for between 5 and 10 minutes. After this time, rinse off any excess juice.

Drain the fish and pat dry then rub all over with the green seasoning mixture. Cover with clingfilm (plastic wrap) and set aside to marinate for at least 30 minutes (best if left for up to 2 hours).

Remove the fillets from the refrigerator and dredge with plain flour. Beat the eggs, arrange in a shallow dish then dip in the fish fillets to coat.

Dredge the fillets in the cornmeal or breadcrumbs, which should be mixed with the curry powder (ensure that they are thoroughly coated).

Heat oil to a depth of 2cm in a deep frying pan. When hot add the breaded fish fillets and fry for about 3 minutes per side, or until evenly golden brown all over and cooked through. Drain on kitchen paper and serve.
