Here is another easy to make green dessert that's ideal for St Patrick's day.

Ingredients:

20 marshmallows
500ml double cream
150ml green crème de menthe
raspberries or sliced strawberries, to garnish
sprigs of mint, to garnish

Method:

Combine the marshmallows and crème de menthe in a bain-marie (double boiler) set over simmering water.

Heat, stirring frequently, until the marshmallows have all dissolved. Take off the heat and allow to cool completely.

Whip the cream in a bowl until soft peaks form, then fold into the marshmallow mixture.

Divide the mixture between silicone moulds, then place in the freezer and freeze for about 3 to 4 hours, or until firm.

Allow to warm slightly before turning out into a dish and serving.

Garnish with raspberries or sliced strawberries and a sprig of mint.
