Crema de Frutas con Barquillo (Fruit and Cream with Wafers): A Spanish recipe for a dessert of a fruit, milk and biscuit puree served with home-made waters.

Ingredients


2 bananas
1 pear
1 apple
1 orange
5 strawberries
8 biscuits (digestives [graham crackers] or oatmeal biscuits, are good)
250ml milk
mint leaves, to garnish

For the Wafers:
80g butter, melted and cooled
60g icing sugar
2 egg whites
60g plain flour

Method:

Begin with the wafers. Combine the flour, sugar, egg whites and butter in a bowl. Beat to combine then spoon onto baking trays covered with greaseproof (waxed) paper. Spread the mass of dough out with the back of a spoon. Transfer to an oven pre-heated to 200°C and cook for 8 minutes, or until nicely browned and cooked. Remove from the oven and allow to cool. If desired the wafers can be curled around the handle of a wooden spoon before they cool completely.

For the fruit, peel the bananas. Peel and core the apple and pear. Chop these fruit and place in a blender with the strawberries. Juice the orange and add this juice to the blender with the milk and crushed biscuits.

Process the fruit mixture until smooth. Pour into serving glasses, garnish with sprigs of mint and a wafer then serve.
