Creamy Potato Gratin

Creamy Potato Gratin is a traditional British recipe for a classic accompaniment of potato slices and onions cooked in cream flavoured with chicken stock, topped with cheese that's oven baked and which makes an excellent side dish for Christmas or Thanksgiving dinner. Ingredients:

750g boiling potatoes, pared and thinly sliced
1 onion, sliced into thin rings
125g grated Cheddar cheese
375ml double cream
1 chicken stock cube, crumbled

Method:

Arrange a layer of potato slices (ensure they are overlapping) in the base of a baking dish and top these with a layer of onion rings. Reserve half the grated cheese and set aside. Sprinkle a little of the remaining cheese over the onions.

Continue the layering process until all the potato and onions has been used up. Combine the cream and chicken stock cube in a bowl. Whisk well then pour over the gratin mixture then top with the reserved Cheddar cheese.

When done, transfer to an oven pre-heated to 180°C and bake for about 40 minutes, or until the potatoes are tender and the top is golden brown. Serve hot.
