Ingredients:

65g butter (or margarine)
1 tsp grated lemon zest
400g icing sugar
4 tbsp lemon juice

Method:

Melt the butter in a pan over low heat then take off the heat. Stir in the lemon zest and icing sugar. Now add the lemon juice, one tablespoon at a time, until the mixture is smooth and the consistency of thick syrup. Use immediately as the topping for lemon-flavoured cakes.
