Creamed Cottage Cheesecake

Ingredients:

1 Graham Cracker Cheesecake Crust
450g Creamed cottage cheese
450g Cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
4 eggs, lightly beaten
1 tsp vanilla extract
1 1/2 tbsp Lemon juice
3 tbsp cornflour (cornstarch)
3 tbsp plain flour
114g Butter, melted and cooled
600ml thick sour cream

Method:

Combine the cheeses and beat until smooth then ad the eggs and vanilla extract and beat until thoroughly combined. Now add the lemon juice along with the flour and cornflour and beat until completely combined. Now add the melted butter and beat until completely integrated before beating in the sour cream.

Pour the mixture onto the prepared crust then transfer to an oven pre-heated to 160°C and bake for 1 hour. At this time turn off the oven and allow the cake and oven to cool naturally for 2 hours (leave the door closed and do not open during this time). Remove the cake from the oven then allow to cool to room temperature before chilling in the refrigerator for at least 2 hour. Remove the pan and serve.
