Cream Cheese Filled Cupcakes: An American recipe for a chocolate cupcake mix that's filled with a blend of cream cheese, desiccated coconut, egg and chocolate chips before baking.
Ingredients:
For the Cupcakes:
200g granulated sugar
120ml oil (any neutral oil)
1 egg
1 tsp vanilla extract
250ml water
180g plain flour
4 tbsp cocoa powder
1 tsp baking soda
1/8 tsp sea salt
For the Filling:
175g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
90g desiccated coconut
100g chocolate chips
1/8 tsp salt
1 egg
65g sugar
Method:
Cream together the sugar, oil, egg and vanilla extract in a bowl until the sugar has dissolved and all the ingredients are well blended.
In a large bowl, mix together the flour, cocoa powder, baking soda and salt. Stir with a fork to mix.
Add the wet ingredients to the dry ingredients and beat until well combined.
For the filling, beat together the cream cheese, coconut, chocolate chips, salt, egg and sugar until well blended.
Line the wells of a muffin tin with cupcake papers. Fill these 2/3 full with the cake batter then drop a tablespoon of the cream cheese mix in the centre of each cupcake. Push this down with the back of a spoon until its just covered by the cake batter.
When done, transfer to an oven pre-heated to 170°C and bake for 25 minutes.
Remove from the oven and allow to cool in the tin for 5 minutes. Carefully transfer to a wire rack to cool further.
