"Courgette Bites: An American recipe for a savoury mini muffin containing carrots, onions, bacon, courgette (zucchini) and cream cheese that makes an excellent nibble for parties.
Ingredients:
1 tbsp olive oil
1 onion, finely chopped
3 slices of rindless bacon, chopped
1 large carrot, grated
1 large courgette (zucchini), grated
3 eggs
100g cheese, grated (or you can use my home-made cream cheese recipe to prepare your own)
4 tbsp cream
60g self-raising flour
Method:
Heat the oil in a large pan and use to gently fry the onion for about 5 minutes, until soft and translucent. Add the bacon and fry until it begins to colour then stir in the carrot and courgette. Cook the ingredients for 2 minutes more.
At this point turn the mixture into a bowl and set aside to cool.
Beat together the eggs, cream and cheese. Season to combine, then stir the egg mixture into the cooled carrot mix before stirring in the flour.
Grease four mini muffin tins. Spoon the courgette batter into the wells then transfer to an oven pre-heated to 180°C and bake for about 16 minutes, or until well risen, cooked through and lightly golden.
Allow to cool in the tins for 10 minutes then turn out onto a wire rack to cool further.
