Here is a traditional fruited tea-time sodabread (also known as an Irish railway cake or a 'spotted dog') from County Cavan in Ireland.
Ingredients:
275g plain flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 1/2 tbsp sugar
50g butter
150g raisins, soaked in cold tea over night to plum them, then drained
2 tbsp caraway seeds, lightly crushed
1 egg
160ml buttermilk
Method:
Sift together the flour, baking soda, baking powder, salt and sugar into a bowl. Dice the butter, add to the flour mix and rub in with your fingers until well combined.
Stir in the raisins and caraway seeds.
Whisk together the buttermilk and egg in a jug then add to the dry ingredients. Using your hands, mix everything together until the mixture comes together as a ball. Continue working the dough until sticky.
Shape the dough into a ball and transfer to a greased baking tray. Allow to rest for 10 minutes then cut a cross in the top with a sharp-bladed knife.
Brush the top with milk to glaze then transfer to an oven pre-heated to 180N0;C and bake for about 30 minutes, or until well risen, golden brown on top and hollow sounding when rapped on the base.
Allow to cool slightly, but serve warm with plenty of butter. This also works well as a tea-time bread, accompanied by clotted cream and jam.
