The
potje style of cooking is common to
Southern Africa and though this recipe uses fowl (chicken and guinea hen) you can use any meat or vegetables.
Ingredients:
900g
guineahen, cubed
900g chicken, cubed
3 tbsp olive oil
flour to thicken
salt and
black pepper
4 slices bacon, chopped
1 large onion, chopped
2 small carrots, chopped
2 celery sticks, chopped
2 garlic cloves, chopped
250ml chicken stock
250ml dry red wine
40g
parsley, chopped
2
bayleaves
1/2 tsp thyme
juice of 1 lemon
10 small onions, peeled
20 mushroom caps, chopped
10 small new potatoes, peeled
2 celery stalks, chopped
Method:
Season the flour and use to coat the meat. Cook the meat for 5 minutes per side in the hot oil, until well browned. Add the bacon, onion, carrot, celery and garlic and cook for 10 minutes. Add the stock, wine, parsley, bayleaves, and thyme then cover and simmer gently for 40 minutes.
Add the lemon juice, onions, mushrooms, potatoes and remaining celery then season with salt and black pepper, Cover and simmer for 1 hour. Serve on a bed of rice.
