Cornmeal Fufu

This is a classic fufu (stiff porridge) recipe from the Central African Republic where the fufu is made from mealie meal (white cornmeal).

Ingredients:

150g white cornmeal
250ml water or milk

Method:

Heat 250ml water in a medium saucepan until it boils. In the meantime, beat 90g of the cornmeal with the 250ml cold water or milk to a smooth paste.

Gradually work this mixture into the boiling water, stirring constantly. Cook for 5 minutes, gradually adding the remaining cornmeal as you do so. When the mixture thickens sufficiently to come away from the sides of the pot take off the heat.

Turn the fufu into a lightly-greased bowl and with wet hands shape into a smooth ball,

Serve immediately.

The traditional manner of eating fufu is to tear off a piece with your hands, then make an indentation in the centre with your thumb. Use the hollow thus formed to scoop up some of your soup (any thick stew traditionally served with fufu) and eat.
