The Cornish name of this summer drink literally means 'Summer Mixture'. With the addition of the mint this makes a refreshing non-alcoholic summer drink.
Ingredients:
300ml fresh mint leaves
juice of 2 lemons
2 tbsp sugar
3 tbsp hot water
300ml apple juice
600ml Ginger Ale
ice cubes
lemon slices, to garnish
Method:
Wash the mint leaves under cold running water then drain in a colander.
Transfer the mint to a large jug and pour over the lemon juice. Dissolve the sugar in the hot water and add to the jug. Add the Ginger Ale and the apple juice then stir and muddle slightly with a long-handled spoon.
Pour over ice into a punch bowl, add a few slices of lemon to garnish and serve immediately.
