Herring Pie

This is a traditional Cornish recipe for a fish pie made with salted herring that was a cheap staple of the local diet. It combined the cheapest and most available fish with mashed potatoes. And, no, this is not star-gazy pie.
Ingredients:
6 herring (the type pickled in brine)
675g (1 1/2 lbs) potatoes
300ml (1 1/4 cups) milk
pickled nasturtium pods (or gherkins)
3 large tomatoes, blanched, peeled and sliced into rounds
250g (3 cups) fine white breadcrumbs
freshly-ground black pepper, to taste
Method:
Clean and bone the pickled herrings then place in a large bowl or pan, cover with plenty of water and set aside to soak over night. The following day drain and wash the fish then skin them.
Place in a pan of boiling water and cook for about 20 minutes, or until tender. Drain the fish, flake their flesh an set aside. In the meantime, bring a pan of lightly-salted water to a boil, add the potatoes and cook for about 25 minutes, or until tender. Drain the potatoes then mash with just enough of the milk to give a smooth mash (do not make it too wet).
Take either two pickled gherkins or a few pickled nasturtium pods and chop these. Mix these with the flaked fish and stir in the remaining milk. Season to taste with black pepper (no need to add salt, the fish are salty).
Turn the fish mixture into the base of a baking dish then arrange the tomato slices on top. Top with the mashed potatoes then scatter over the breadcrumbs.
Transfer to an oven pre-heated to 180ºC (360ºF) and bake for about 40 minutes, or until the dish is piping hot and the top is nicely browned. Serve hot.
