Cornish Fish Soup

In essence this is one of the classic recipes that lays the foundation of seafood chowder. It's half way between Scottish cullen skink and a New England chowder.

Ingredients:

1 whole haddock, cleaned, scaled and filleted
150ml water
600ml milk
1 large onion, finely chopped
1 tbsp butter
salt and freshly-ground black pepper, to taste

Method:

Combine the fish fillets and water in a large saucepan. Bring to a boil and continue boiling until the fish breaks up into shreds.

Take off the heat and strain off the liquid (reserve this). Set the fish aside then combine the fish cooking stock and the milk in a saucepan. Add the onion and butter then bring to a simmer and cook for about 20 minutes, or until the onion is tender.

Add the fish pieces and season to taste (remove any skin and chop the meat finely). Allow the mixture to heat through and serve immediately. If desired each bowl can be garnished with a little shredded parsley.
