This is another classic example of a Cornish harvest cake, in this instance a fruit cake made with a blend of flours and flavoured with mixed spice and candied peel.
Sift together the flours, mixed spice and bicarbonate of soda into a bowl. Dice the butter, add to the flour mix and rub in with your fingertips. Stir in the mixed peel, fruit and sugar.
Beat in the egg then work in enough milk to yield a dropping consistency. Turn into a greased and floured loaf or cake tin then transfer to an oven pre-heated to 190ºC an bake for about 90 minutes, or until the top is golden brown and a skewer inserted into the centre of the cake emerges cleanly.
Remove from the oven and allow to cool in the tin for 10 minutes. Turn out onto a wire rack and allow to cool completely before slicing into wedges and serving.
