What's better than fudge to share or give away as a gift. This Cornish clotted cream fudge is extra indulgent and makes an excellent home-made gift for Christmas or Diwali.
Ingredients:
275g unrefined caster sugar
100g golden syrup
1 x 227g tub Cornish Clotted Cream
½ tsp vanilla extract
Method:
Grease and line the base of a 20cm square roasting tin.
Combine all the ingredients in a large saucepan and place over medium-low heat. Cook, stirring constantly until the ingredients come to a lid.
Cover the pan and continue boiling for 3 minutes. Remove the lid and continue to boil until the temperature reaches 116°C/240°F as measured on a sugar thermometer. If you don't have a thermometer, drop a little into a cup of cold water. If a soft ball is formed, it is ready.
Take off the heat and beat with a whisk until the mixture turns matte, becomes thick and a little grainy (this could take up to 10 minutes' beating).
Now pour the mixture into the tin and set aside to cool and harden for 30 minutes. After about 10 minutes mark into squares with the blade of an oiled knife.
Once completely set divide into pieces and store in an air-tight container.
