Blackberry Drink

Blackberry Drink is a traditional English recipe (from Cornwall) for a classic non-alcoholic drink base made from blackberry juice and white wine vinegar that's lightly spiced and sweetened and which can be used as a cordial. Though this particular recipe comes from Cornwall, various versions of fruit vinegars can be found from all around the UK. They were particularly popular in Victorian times and were used for flavouring sauces and puddings as well as the based for drinks.

Ingredients:

1.5l fresh blackberries
600ml white wine vinegar

For every 500ml of blackberry juice:
6 cloves
1cm pice of ginger
350g sugar

Method:

Wash the blackberries, dry in a colander then combine in a large bowl with the vinegar. Cover loosely with clingfilm then set aside to infuse for 24 hours.

Turn the mixture into a jelly bag and allow the juices to drain naturally over night. The following day measure the volume of liquid and for every 500ml of blackberry juice add 6 cloves, a 1cm piece of ginger and 350g sugar. Combine all these ingredients in a saucepan and bring to a boil.

Continue boiling for 30 minutes then strain the mixture through a double layer of muslin (cheesecloth). Pour into a bottle, stopper securely and store (as long as the acid levels are high enough, it will keep for several months). However, you can process in a boiling water bath for 20 minutes if you like.

Once opened, store the blackberry vinegar in the refrigerator. Use as you would any cordial and dilute with sparkling water before serving. It can also be used to flavour puddings and sauces (it makes a good addition to venison sauces).

I have been informed that this blackberry vinegar used to be mixed with cider during the winter before being mulled with spices to make a winter warming drink.
