Cornish Barley Bread

Though the original recipe called these 'breads', they are more like barley cakes, but they are eaten where bread would normally be consumed.

Ingredients:

500g (1 lb) barley flour
500g (1 lb) stone-ground wheat flour
1 tsp Cornish sea salt
250g (9 oz) butter
beer to blend

Method:

Combine the flours and salt in a bowl. Dice the butter, add to the flour mix and rub into the flours with your fingertips until the mixture resembles coarse crumbs.

Add enough of the beer to bring the ingredients together as a soft dough then divide into pieces and shape into cakes. Arrange these on a floured work surface and cook on a hot bakestone or a griddle pan for about 4 minutes per side, or until nicely coloured and cooked through.

Serve warm.
