Cornflowers are used commercially to provide blue food colouring, so it's no surprise that it's also used in home cookery. This recipe provides vibrant blue-coloured sugar to use as a garnish or colour base. Note that the blue colour in cornflowers is not light-stable so you will need ti keep the sugar in the dark. If you use other colours of cultivated cornflowers you will get red, pink, yellow colours etc.
Ingredients:
2 handful of freshly harvested cornflowers (petals only)
5 tbsp white sugar
Method:
Mix the cornflower petals with the sugar and crush/mince in a mortar and pestle or herb grinder until the sugar turns blue.
Dry for 2 hours at 50°C in the oven or over night in a dry place.
To preserve the colour store your Cornflower Sugar in the dark - for example in a non-transparent container or in a drawer.
