Congee with Fish Fillet a Classic Chinese recipe for a one-pot dish of rice and fish served in bowls on a bed of lettuce, spring onions and ginger.

Ingredients:

225g short-grain rice
3l water
200g firm white fish fillet, flaked
2 tsp salt
1/2 tsp white pepper
175g lettuce, finely shredded
2 tbsp spring onions, finely shredded
2 tbsp fresh ginger, finely shredded
3 tbsp soy sauce (to serve)

Method:

Wash the rice, place in a pan and pour over the water. Cover the pan, bring to a boil and cook for 2 hours, stirring regularly.

At the end of this time, add the fish fillet along with the salt and white pepper. Stir well to combine then bring back to a boil and cook for a few minutes more.

To serve, divide the lettuce, spring onions and ginger between individual bowls. Pour over the congee then sprinkle over each bowl with about 1 tbsp good quality soy sauce.

Serve immediately.
