Ingredients:

1 red bell pepper, de-seeded
1 yellow bell pepper, de-seeded
1 green bell pepper, de-seeded
1 small onion
8 cherry tomatoes
100g wild mushrooms

For the Seasoned Oil:
6 tbsp olive oil
1 tsp sesame oil
1 garlic clove, crushed
1/2 tsp mixed dried herbs (or Herbes De Provence)

For the Walnut Sauce:
125g walnuts
150ml double cream
1 tbsp olive oil
salt and freshly-ground black pepper, to taste

Method:

Begin with the walnut oil. Add the walnuts to a food processor and process to a smooth paste. With the machine running, slowly pour in the double cream. Season to taste, then mix in the olive oil. Turn into a bowl, cover and set aside to chill in the refrigerator as you prepare the kebabs.

Cut the bell peppers into 3cm pieces. Peel the onion and cut into wedges (leave the root end intact, so that the wedges stay together).

Thread the bell pepper pieces, onion wedges, tomatoes and mushrooms onto skewers, ensuring that you alternate the coloured bell peppers.

For the seasoned oil, mix together the oils, garlic and herbs in a small bowl. Brush this mixture liberally over the vegetable kebabs.

Set the kebabs on the rack of a barbecue over medium-hot coals and cook, turning frequently and brushing frequently with the seasoned oil for about 12 minutes, or until the vegetables are cooked through.

Serve hot, accompanied by walnut sauce.
