Buñuelos (Sweet Fried Dough)

These sweet, fried dough balls are a Colombian dessert favourite that are traditionally served for Christmas.

Ingredients:

120g cassava flour
120g white maize flour
100g sugar
100g queso fresco
100ml milk
oil for deep frying

Method:

Mix the flours in a bowl then whisk in the sugar until thoroughly combined.

Crumble the cheese then rub into the flour and sugar milk until the mixture is crumbly.

Slowly work in the milk until the ingredients come together as a loose dough.

In the meantime, heat oil for deep frying in a wok, deep pan or deep fryer to 180C

Wet your hands with water. Take heaped tablespoons of the dough and roll into rough balls between your palms. Drop into hot oil and fry, turning over half way through until cooked through and golden brown.

Remove with a slotted spoon or spider, drain on kitchen paper and serve warm.
