Coeur Coulant Chocolat Fruits Rouges (Chocolate Pudding with Flowing Berry Hearts): A French recipe for a chocolate pudding dessert that has a red berry centre which flows out of the pudding as it's cut open, shown accompanied by redcurrants.
Ingredients:
200g dark chocolate
3 eggs
60g red fruit (redcurrants, raspberries etc)
60g sugar
60g butter
1 tbsp plain flour
Method:
Combine the berries in a small food processor with 1 tbsp water. Process to a slurry, then divide between 4 ice tray compartments. Transfer to the freezer and freeze for 90 minutes.
Combine the chocolate and 50g butter in a bain-marie (double boiler) set over barley-simmering water. Stirring until the chocolate has melted and blended with the butter.
Add the flour and sugar to a mixing bowl. Work in the eggs then add the melted chocolate. Stir to combine then set aside to cool.
Grease and flour 4 individual-sized ramekins. Pour in the chocolate batter, filling the ramekins no more than half way. Add the an ice cube of red fruit to the centre of each then cover with the remaining batter.
Sit on a baking tray then transfer to an oven pre-heated to 220°C and bake for 12 minutes, or until the chocolate batter is just set.
Allow to cool slightly then invert the puddings from the ramekins onto serving plates. Serve drizzled with a little berry coulis.
As you cut into the puddings the fruit centres will flow out. These make excellent desserts for Valentine's day.
