This is a classic French recipe for a dish of cod and potatoes in a tomato-based sauce that illustrates the two meanings of Portugaise in French cookery (in the Portuguese style and a tomato-based sauce)
Ingredients:
1.2kg Cod fillets, skinned and cut into pieces
6 Potatoes, washed, peeled and sliced
6 Onions, peeled and sliced
6 ripe Tomatoes, sliced
3 Bell Peppers, cored and diced
12 Black olives
4 tbsp Olive oil
Salt and freshly-ground black pepper, to taste
Method:
Arrange the cod, potatoes, onions, tomatoes and peppers in a baking dish, alternating the ingredients. Scatter over the olives and drizzle with olive oil.
Season to taste with salt and pepper, cover the dish with foil then transfer to the centre of your pre-heated oven.
Bake for 90 minutes, basting the dish with the pan juice frequently during this time. Serve hot.
