Cocadas (Coconut Bars) a Classic Ecuadorian recipe for a snack or candy bar made from a blend of desiccated coconut, coconut water, sugar and milk boiled until thick and shaped into bars before being cooled and set.
Ingredients:
200g desiccated coconut
500ml coconut water (or the water from 1 coconut made up to 500ml with coconut milk)
500g muscovado sugar
1/2 tsp ground cinnamon
250ml milk
Method:
Combine the desiccated coconut, coconut water, sugar, cinnamon and milk in a pan. Heat gently until the sugar dissolves, then cook gently, whisking constantly until the dough is thick enough to come away from the base of the pan.
Take off the heat and divide into 10 portions. Shale these into bars and allow to cool and harden before serving.
To make white cocadas replace the dark brown sugar with white sugar.
