Cobnut Stuffing is a traditional British recipe for a classic stuffing made with cobnuts intended for use with game birds. The full recipe is presented here and I hope you enjoy this classic British version of: Cobnut Stuffing.

Ingredients:
1 onion, finely chopped
110g smoked streaky bacon, finely chopped
110g celery, finely chopped
1 tbsp sage, finely chopped
1 tbsp flat-leaf parsley, finely chopped
50g shelled cobnuts, pounded in a pestle and mortar
150g wholemeal breadcrumbs
1 egg
salt and black pepper, to taste
Method:
Making the stuffing is very easy, simply combine all the ingredients (Except the egg) in a bowl. Stir to mix thoroughly then break in the egg and stir to combine.
This makes an excellent stuffing for game birds and can either be used to stuff the necks and cavities of the birds or it can be placed in a dish with about 3 tbsp roasting juices and baked for about 20 minutes.
