A modern twist on traditional Cornish fudge, where dark chocolate is added to the standard mix to yield a chocolate version.

Ingredients:

350g (14 oz) dark chocolate (at least 70% cocoa solids), chopped
275g (11 oz) unrefined caster sugar
100g (4 oz) golden syrup (corn syrup)
225g (9 oz) Cornish clotted cream
40g (1 1/2 oz) butter
pinch of Cornish sea salt

Method:

Combine the chocolate, sugar, syrup, clotted cream, butter and salt in a heavy-based pan. Place over low heat and stir gently until all the ingredients have melted. Continue stirring and heating until the sugar has dissolved.

Bring to a simmer, still over low heat, and continue cooking, stirring constantly, for 12 minutes. To test if the fudge is ready, drop a small amount of the mixture into a cup of cold water. If it forms a soft ball, then the fudge is ready.

At this point, immediately take off the heat then pour into a greased and lined tin (about 20cm square). Smooth the top with a spatula then set aside to cool. Transfer to the refrigerator and chill for about 2 hours, or until the fudge is firm.

Cut into squares then turn the fudge out and break into pieces. Wrap each piece in coloured greaseproof paper, foil or plastic. Store in jars.

This makes and excellent home-made Christmas gift. Note that the melting point of this fudge is quite low and it's best to store in the refrigerator to keep it firm.
