Ingredients:

For the Cake:
2 clementine oranges
175g softened butter
175g caster sugar
3 eggs, beaten
175g self-raising flour
4 tbsp ground almonds
3 tbsp yoghurt
1 tbsp clementine juice

For the Glaze and Topping:
6 tbsp clementine juice
2 tbsp caster sugar
3 white sugar cubes, crushed

Method:

Grease a cake tin and line the bottom with baking parchment. Then pare the rind from the clementines and chop finely (alternatively grate the rind. For extra zing, add the rind of a lemon quarter).

In a bowl, cream together the butter, sugar, and clementine rind until the mix is pale and fluffy. Gradually add the beaten eggs, mixing well after each addition. Then gently fold-in the self-raising flour, followed by the ground almonds, cream and clementine juice. Spoon the mixture into the prepared tin and smooth the surface. Bake in a preheated oven at 180°C (350°F/Gas Mark 4) for about 55 minutes, or until a fine skewer inserted into its centre comes out clean. Leave on one side to cool, and prepare the glaze.

In a small saucepan, add the clementine juice and sugar, bringing the mix to the boil. Simmer for five minutes and drizzle over the cake until it has been absorbed, then sprinkle with crushed sugar cubes.
