Gently whisk the evaporated milk and whole milk in a bowl. Mix together the rice and sugar in an ovenproof dish then pour the milk over the top and stir. Grate the nutmeg over the surface of the dish and dot the butter on top.
Place the dish in the centre of an oven pre-heated to 150°C (300°F/Gas Mark 2) and bake for 30 minutes. Stir the pudding at this point then return to the oven for a further 30 minutes before stirring once more.
Return the dish to the oven and cook for a further hour. Serve in pudding bowls with a dollop of damson jam.
