Apple Clafouti: A classic Togolese dessert of apples baked in a flour, egg and milk batter.
Ingredients:
3 apples
120g plain flour
120g sugar
3 eggs
pinch of salt
500ml milk
50g butter or margarine, melted and cooled
juice of 1 lemon
Method:
Peel the apple lengthways and keep the peel.
Using a knife, quarter the apples then remove the cores. Cut each apple segment into three pieces. Toss the apples with the lemon juice (this will prevent them from browning).
Arrange the apple pieces in a greased and floured baking dish. Beat together the eggs and sugar in a bowl until creamy. Add the flour, melted butter and milk and beat thoroughly to combine.
Pour the resultant batter into your prepared tin then transfer to an oven pre-heated to 190°C and bake for 25 minutes, or until set and golden brown on top.
Allow to cool in the tin for 10 minutes then carefully turn out onto a plate to cool completely before slicing and serving.
