Citrus Duckling Skewers: Classic British recipe for a barbecue skewer of duckling, red onion and aubergine in a citrus marinade.

Ingredients:

3 boned duckling breasts, skinned
1 small red onion, sliced into wedges
1 small aubergine (eggplant), cut into cubes
lime and lemon wedges, to garnish

For the Marinade:
finely-grated zest of 1 lemon
juice of 1 lemon
finely-grated zest of 1 lime
juice of 1 lime
finely-grated zest of 1 orange
juice of 1 orange
1 garlic clove, crushed
1 tsp dried oregano, crumbled
2 tbsp olive oil
dash of Tabasco sauce

Method:

Cut the duckling breasts into bite-sized pieces and place in a non-reactive bowl along with the red onions and aubergine pieces.

Combine all the marinade ingredients in a screw-top jar and shake to combine. Pour over the duck pieces, stir to combine and set aside for 30 minutes.

After this time, remove the meat and the vegetables from the marinade (reserve the marinade) and thread onto skewers. Set onto an oiled rack on a barbecue over medium-hot coals and cook, turning and basting frequently with the reserved marinade for about 15 to 20 minutes, or until the meat is thoroughly cooked through.

Serve the kebabs immediately garnished with lemon and lime wedges for squeezing.
